Turkey Stuffed Green Peppers SERVES 4
1 lb. ground turkey 1/3 cup instant rice 1/ 3 cup carrot, grated 1/4 cup onion, chopped 3 Tbs. fresh parsley, chopped 1 to 2 cloves garlic, minced 1/2 tsp. salt 1/2 tsp. pepper 1 can (12 oz.) tomato sauce, divided 4 small green peppers
In a medium bowl, combine turkey, rice, carrot, onion, parsely, garlic, salt, pepper and 1 cup tomato sauce. Mix well. Cut tops off each green pepper. Remove and discard seeds and membranes. Divide turkey mixture evenly and spoon into peppers. Place in an 8 x 8 inch baking dish. Bake at 350 degrees for 20 minutes. Spoon remaining tomato sauce over peppers before serving.
