Country Fried Tomatoes (Red or Green) Servings: 4
4 medium tomatoes in 1/4-inch thick slices 1/2 cup dried whole wheat bread crumbs -OR- Italian seasoned bread crumbs 2 tablespoons Parmesan cheese 1/2 teaspoon dried oregano or basil 1/2 teaspoon fresh ground black pepper 1 tablespoon butter -- or more as needed
Mix crumbs with Parmesan cheese and seasonings. Coat both sides of tomato slices with mixture. Saute a few at a time in butter in frying pan over Medium-High heat until golden. Repeat adding more butter, if needed. Source Unknown.
