Crunchy Eggplant

1 eggplant
1 egg white -- lightly beaten
salt, pepper, oregano to taste
corn flake crumbs

Add spices to egg white. Dip eggplant slices into mixture. Coat with crumbs. Put on sprayed baking sheet. Bake on high for about 20 minutes. Source unknown.
