Easy Peach Soup

1 (10 oz.) bag frozen peaches
1/4 cup orange juice
1/4 cup pineapple juice
1 Tbsp. Amaretto
3/4 tsp. lemon juice
1 Tbsp. plus 1 1/4 tsp. granulated sugar
1/2 cup sour cream

Place all ingredients except sour cream into a medium saucepan and bring to boil. Simmer for several minutes until peaches become soft. Pour into a glass mixing bowl and cool in refrigerator until it's well chilled. Pour cooled mixture into a blender and blend until completely pureed. Add sour cream and blend until smooth. Thoroughly chill before serving. Garnish with peach slices and a sprig of mint. Makes approximately 2 1/2 cups. EXCELLENT!!!
