Meat Sauce

For meat sauce I follow mom’s way...

Heat olive oil in a heavy bottomed pan and brown:
Italian sausage
spare ribs(pork)
pork neck bones
meatballs (your favorite recipe)
Remove meat from pot.

Slice and fry until light brown:
4 large cloves of garlic

Add:
3 large cans of Italian crushed tomatoes
salt and pepper
dried oregano and basil (fresh is better)
a splash of dry red wine
about a cup of water

Start to simmer sauce and add the browned meat. Cover and simmer for 2 hours.

Taste for reseasoning adding a sprinkle of sugar if too acidy. I don't care for real thick gravy,so I adjust for liquid as needed.If too thin, remove cover and allow to simmer until thicker.
