Two Cheese Seafood Linguine

Yield: 4 servings

1 lb shrimp, peeled, deveined*
1 tsp dried oregano, crushed
1 tbsp butter
1 tomato, medium, chopped
1/2 cup whipping cream
1/2 cup sliced green onions
1/4 cup shredded swiss cheese or
1/4 cup crumbled blue cheese
1/4 cp grated paresan cheese

Cook linguine to package directions.

While linguine is cooking, heat garlic, oregano and butter 1 minute in saucepan, stirring frequently.

Add tomato and continue to cook for 3 minutes or until tomato is cooked.

Add shrimp, cook until just pink.

Add remaining ingredients. Cook covered until cheese melts and sauce is hot.

Serve over drained linguine.

*You can substitute crab, lobster or anything else. This is quick, easy and quite good. Enjoy!
