Garlic Potato Cake

One of the local restaurants, famed for its garlic mashed potatoes also makes a garlic potato cake which I make without dairy.

Boil red-skinned potatoes until tender. While these are cooking saute alot of chopped garlic in olive oil. When the potatoes are done, smash them leaving some chunks and then mix in the oil and garlic. Salt and pepper to taste and then pack into an oiled baking dish, brush the top with oil and bake at about 425 for 30-45 min until the top browns.

I did not give you quantities as you can make a little or alot as needed and add garlic and oil to taste. I probably use 4-5 medium potatoes with 6-8 cloves of garlic.
