Basic Fried Yellow Plantains (Maduros Fritos) Servings 6
1 cup corn oil or whatever oil you use for frying 3 yellow (amost blacK are best) plantains, peeled and cut into 2-inch slices ( we cut the slices slanted, but you can cut them according to your preference) Heat the oil in a skillet and fry the plantain slices until golden brown on all sides. These are delicious to accompany PAELLA or Moros y Cristianos.
