Cornsticks (Sorullitos de Maiz)
2 cups water 1 teaspoon salt or Adobo 1 1/2 cups yellow cornmeal 1/2 cup grated Cheddar cheese 3 cups corn oil Bring the water and salt to a boil in a small saucepan. Add the cornmeal. Reduce the heat to low and cook, stirring constantly, for 3 to 5 minutes, until thickened. Remoce the pot from the heat and add the grated cheese. Let the mixture cool a little. Shape 2 tablespoons of dough into a stick about 3 inches long. Repeat with the remaining dough. Heat the oil in a skillet until hot but not smoking and fry until golden brown on all sides.
