Broccoli cheddar bake
8 cups fresh broccoli 1 cup finely chopped onion 12 eggs 2 cups skim milk 1.5 cups (6 ounces) cheddar cheese (shredded) 1/2 tsp olive oil 1 tsp pepper 1/4 tsp thyme black pepper to taste 1 cup skim milk Preheat oven to 350 degrees. In nonstick skillet, sauté broccoli and onion in olive oil until tender; set aside. In a bowl, combine eggs, milk, and 1 cup of the cheese. Mix well. Stir in broccoli, onion, and pepper. Spray 3 qt baking dish with nonstick spray. Pour the mixture into the baking dish. Set the dish into a larger pan filled with about 1 inch of water. Bake uncovered for about 45 minutes. (When a knife inserted in the center comes out clean, it is done). Remove from the oven and top with remaining cheese. Let stand about 10 minutes before serving.
