575g/1 1/4 lbs cooked chicken or turkey, skinned, boned and sliced
For the Sauce: 300ml/1/2 pint ready made mayonnaise 150ml/1/4 pint lightly whipped double cream 1 - 2 tbsp curry paste, according to taste and strength 50g/2oz stoned dried apricots, finely chopped Salt and freshly ground black pepper 25g/1oz sultanas, chopped 25g/1oz raisins, chopped Juice of 1/2 lemon
To Garnish: Sprigs of parsley
To Serve: Seasonal salad
Place the slices of chicken into a non metallic shallow dish. Spoon the mayonnaise into a mixing bowl, then fold in the double cream. Stir in the remaining ingredients before coating the chicken. Leave covered for 1 hour turning carefully once or twice. Serve the chicken garnished with parsley and seasonal salad. |
