Penne with Vodka and Spicy Tomato Cream Sauce

1/8 cup extra virgin olive oil
2 large garlic cloves minced
1/4 teaspoon crushed red pepper flakes
pinch of salt
15-ounce can diced tomatoes
8 ounces penne or similar pasta
1/2 cup heavy cream
2 tablespoons Vodka
1/4 cup chopped parsley

In unheated large skillet combine oil, garlic, peppers and pinch of salt. Stir to coat with oil. Cook over moderate heat till garlic is golden. Stir in tomatoes and simmer for 15 minutes. Meanwhile boil water and cook pasta al dente. Add drained pasta to skillet with tomato sauce. Add vodka and toss. Add cream and toss. Cover and reduce heat to low. Let sit for 1-2 minutes. Add parsley and toss again. Serve without cheese. Serves 2.
