Creamy Spinach Dip alt.food.low-fat/Donnalyn (1995) Source: alt.food.fat-free
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry 1 cup nonfat sour cream 2 scallions, cut in chunks 2 teaspoons dried dill weed 2 to 3 teaspoons lemon juice 1/2 teaspoon salt
Process all ingredients in a food processor or blender until smooth.
Optional: add chopped water chestnuts (after you remove the dip from the food processor)
Makes 2 cups Per 2 tablespoons: 15 cal, 2 g pro, 2 g car, 0 g fat, 0 mg chol, 92 mg sod.
I make a double recipe and serve it in a scooped out round loaf of sourdough bread (most sourdough bread is fat free, but check the label).
I put pieces of sourdough bread around the loaf for dipping (a lot of these pieces come from the scooped out loaf, but I usually buy a second loaf so I'll have enough for dipping. This is a really good non-fat dip that you can take to parties with no apologies!
