Miriam Aldridge's Oatmeal Brownies (Super Chewy Brownies) rec.food.cooking/Gayle Hodur (1994)
This recipe was clipped from a newspaper and is spattered and tattered in my file from frequent use. We call it the quick chocolate fix because it is so fast when we're desperate.
1/2 cup butter, melted 1 cup sugar 2 eggs, well beaten 1 tsp. vanilla 1/2 flour 1/2 cup cocoa 1/2 tsp baking powder 1/2 tsp salt 1 cup Quaker Oats (preferable the Old Fashioned ones) 1/2 cup chopped nuts (we add extra, cause we love 'em)
Combine ingredients in order given. (If you melt the butter in a saucepan, or in a microwave mixing bowl, you can mix everything in it and have less to clean.) Mix well. Spread batter in a greased 8 x 8 inch pan. Bake at 350 degrees F for about 20 min. Don't overbake.
At various times I've added liqueur and/or coconut to these with great success.
