2 green peppers, diced 1 onion, diced 1/2 cup vegetable broth 3 cups cooked instant rice 1 cup V-8 juice 3 Tablespoons ketchup 1/8 teaspoon pepper
Preheat oven to 350: F. Saute peppers and onions in broth until tender. Prepare rice according to directions. In large bowl, combine rice and remaining ingredients; mix well. Add pepper mixture to rice; mix well. Place rice mixture into a medium nonstick baking dish. Bake for 20 minutes. Makes 6 servings. Calories .118....Fat 0 g Fiber 2 g.
