Quick Quiche Serves 6 to 8 Rec.food.recipes/Toncats/2000
1 (10 oz.) pkg. frozen chopped broccoli or spinach 1 cup dairy sour cream 1 cup creamed cottage cheese 1/2 cup biscuit mix 1/4 cup melted margarine 2 eggs 1 tomato, peeled and sliced thin 1/4 cup grated Parmesan cheese 1 tsp. Creole seasoning 1 Tbsp. Worcestershire sauce 1 tsp. Mrs. Dash Tabasco and other seasonings to taste
Heat oven to 350 degrees. Grease 9 or 10-inch pie plate. Spread vegetable in plate and sprinkle with salt and seasonings. Beat sour cream, cottage cheese, biscuit mix, margarine and eggs until smooth, 15 seconds in blender on high or 1 minute with hand beater. Pour into plate. Top with tomatoes; sprinkle with Parmesan cheese. Bake until knife inserted between center and edges comes out clean, about 30 minutes. (May like to sprinkle again with Parmesan cheese.)
