Watermelon Salsa rec.food.veg.cooking/Joel/1999
2 1/2 cups fresh Florida watermelon 3 cup Florida tomato, diced medium 1/2 cup Florida red onion 1 tsp. jalapeno pepper 1 Tbsp. Florida garlic 2 Tbsp. fresh cilantro 1 Tbsp. fresh basil 1 Tbsp. fresh parsley 1 1/2 Tbsp. Balsamic vinegar 1/4 cup olive oil salt & pepper to taste
Puree the tomatoes and watermelon, finely chop up the onion, herbs, jalapeno pepper and combine all ingredients, then add olive oil and balsamic vinegar and salt and pepper.
