Easy Black Beans and Yellow Rice Source: Southern Living-1992 Annual Recipes Serves 2
vegetable cooking spray 1/2 cup chopped onion 1/4 cup chopped celery 1/4 cup chopped green pepper 1 (15 oz) can black beans -- drained 1 (14 1/2 oz) can whole tomatoes, undrained and chopped 1 teaspoon sugar 3/4 teaspoon Italian seasoning 1/4 teaspoon garlic powder 1/4 teaspoon pepper 1/8 teaspoon salt 1/8 teaspoon hot sauce 1/3 cup long grain white rice uncooked 1/4 teaspoon ground turmeric
Coat a medium saucepan with cooking spray, and place over medium-high heat until hot. Add onion, celery and green pepper; cook, stirring constantly, until tender. Stir in drained beans and next 7 ingredients; bring to a boil. Reduce heat, and simmer, uncovered, 15 minutes or until thickened, stirring frequently; set aside. Combine water, rice, and turmeric in a saucepan; bring to a boil. Cover, reduce heat, and simmer 20 minutes. Remove rice from heat; let stand 5 minutes or until liquid is absorbed. Serve black bean mixture over rice. |
