Nam Phrik Kaeng Ka-ri (Yellow Curry Paste) Source: The Elegant Taste of Thailand by KOngpan and Srisawat Makes about 1/2 cup
3 dried chillies, soaked in hot water for 15 mins and deseeded 3 Tbsp chopped shallots 1 Tbsp chopped garlic 1 tsp chopped ginger 1 Tbsp coriander seeds 1 tsp cumin seeds 1 Tbsp chopped lemon grass 1 tsp shrimp paste 1 tsp salt 2 tsp curry powder
Heat shallots, garlic, ginger, coriander and cumin seeds over low heat in a wok for 5 minutes, grind to a powder. Blend remaining ingredients in a blender, add ingredients from wok.
