Rich Yellow Cake

Here's our favorite easy, delicious yellow cake recipe, given to me by a friend's mother who used to be a home ec. teacher. This is kind of the standard birthday cake, and has a very nice, moist yet delicate crumb.

Sift together:

2 1/2 cups sifted cake flour
1 1/2 cups sugar
3 tsp baking powder
pinch salt

Add 2/3 cup shortening...mix with electric mixture a little, then pour in a little more than half of this mixture:

1 cup milk
1 1/2 tsp vanilla

Beat 2 minutes with electric hand mixer (if I use the KitchenAid this cake does not turn out as well)

Add 3 eggs and remaining milk/vanilla mixture and beat 2 more minutes.

Pour into greased and floured 13 x 9-inch pan. Bake about 22 minutes at 350 degrees. Not exactly sure about times... test for doneness.
