Butterfly Waffles
2 cups of Bisquick l/4 to l/3 cup of cooking oil (I use the lesser amount. Works fine either way) l egg l0 oz bottle of club soda* (I use the small bottle because it has to be fresh to work best and if you use it out of the big one, sometimes it has lost some of its fizz)
Mix together in a bowl bigger than you think you need because when you add the club soda it foams way up. Standby the waffle iron when you open it, with a butterfly net, because they will float up to the ceiling and are crisp and light. They make good ice cream sandwiches, too. They freeze well. I reheat them in the toaster oven, but you could do it in a skillet, too.
*Pam's Note: I use Seltzer Water, as Club Soda has too much sodium for me. But, I do adda pich of salt to the recipe.
