Butterscotch Pie
1 (9 inch) baked pie shell 1 1/4 cup brown sugar, packed 1/3 cup water 2 eggs 1/3 cup flour 2 cups milk, scalded 1/2 tsp salt 1/2 stick butter 1 TBS vanilla extract
In the top of a double boiler, combine water, brown sugar, eggs, milk, salt and flour. Whisk while cooking over boiling water until thick and bubbly. Stir in butter and continue cooking until butter is melted and incorporated.
Remove from heat and stir in vanilla. Allow filling to cool. Pour into baked pie shell.
Top with whipped cream, or a meringue you brown in a 350ºF oven.
