Easy Chocolate Mousse
1/3 cup water 1/4 cup granulated sugar 1 (6 oz) bag chocolate chips 3 egg yolks (Egg Beaters can be substituted for raw egg) 1/2 cup salted diced almonds, optional 3 TBSP dark rum 1 1/2 cups whipping cream
Combine water, sugar and chocolate chips in a small sauce pan.
Stir over med-low heat until dissolved.
Put cooked mixture into blender and add egg yolks and almonds. (If desired.) Process turning on and off until almonds are coarsely chopped. Cool slightly.
Pour into large bowl and stir in rum.
Gently fold in whipped cream.
Freeze or chill in decorative glass bowl before serving. (Can also be molded.)
