Grilled Pork Chops with Lime-Shallot Marinade
4 boneless center-cut pork chops, about 3/4" thick 1 large shallot, chopped 1/2 cup fresh lime juice 1/2 tsp salt 2 TBS honey 1/4 tsp cayenne pepper, up to 1/2 tsp
Place pork chops in a self-sealing plastic bag. Combine chopped shallot, lime juice, salt, honey, and cayenne pepper in a clean jar with tight lid. Shake well until well mixed and pour over pork; seal bag and refrigerate for 2-4 hours, turning once or twice.
Remove pork chops from marinade; brush off shallots back into marinade. Broil or grill over medium heat for 8-10 minutes or until done, turning once. Meanwhile, heat shallot and marinade mixture in a small saucepan to boiling, stirring frequently. Let cool for a few minutes and serve marinade over pork chops.
