Kozy Shack Rice Pudding

1 cup cooked rice (water polished if possible)
3/4 cup sugar
1/3 cup flour
1/4 tsp salt
2 cups whole milk
3 egg yolks, beaten
1/2 tsp vanilla extract

Place the sugar, flour, salt, and milk into a saucepan. Stir on medium low heat until mixture begins to boil. Let boil while stirring constantly for 2 - 3 minutes. Remove from heat and place 1/2 cup of the hot mixture into the egg yolks and mix well. Pour the egg yolks and the rice back into the pudding mixture and put back on the stove and cook for another 2 - 3 minutes. Make sure that you stir constantly so that the mixture does not clump or stick to the bottom of the pan. Remove from heat and stir in the vanilla. Chill before serving.
