Angel Hair Pasta with Lemon and Garlic Servings: 4
3 garlic cloves, peeled and crushed 1 tsp. olive oil from jar of sun-dried tomatoes 1/2 cup dry white wine 1 3/8 cup freshly squeezed lemon juice 1/4 cup oil-packed sun-dried tomatoes, chopped 8 oz. angel hair pasta, cooked, kept warm 1/4 cup chopped fresh basil 2 tbsp. grated parmesan freshly ground black pepper -- to taste
Saute garlic in olive oil, but be careful not to burn it. Remove pan from heat; add wine. Return to heat and reduce by half. Stir in lemon juice and tomato. Toss with pasta; add basil, parmesan and black pepper. Serve immediately. - Source unknown
