Croatian Kugel

4 medium potatoes -- pared and grated
2 cups milk
4 eggs -- beaten
1 medium onion -- chopped
Margarine
Salt and pepper to taste

Grate the potatoes and combine with milk to keep them from darkening. Thoroughly blend with eggs. In a 10-inch ovenproof skillet, saute the onion in a small amount of margarine until transparent. Blend in potato and egg mixture and seasonings. Bake uncovered in the skillet at 350 F. for 1 hour. Serve with sour cream or applesauce.
