Oven Lite French Fries
Servings: 3

1 pound baking potatoes -- (about 2 large)
3 teaspoons light oil
1 teaspoon sweet paprika
Salt and pepper to taste
Grated Parmesan cheese

Scrub potatoes and do not pare. Cut in halves and then cut in eighths longwise. Soak potatoes in very cold water to which 1 teaspoon white vinegar has been added. Soak 25 minutes. Drain potatoes and blot dry with paper toweling.

Spray a large shallow nonstick pan with vegetable spray. In a bowl, combine thoroughly dried potatoes with oil, paprika, salt and pepper. (Can add other seasonings, if desired).
Arrange in a single layer and bake in a preheated 475 F. oven for 20 minutes, stirring frequently to brown evenly. Potatoes are done when crisp and golden, and tender when pierced with a fork. Blot excess oil with paper toweling; sprinkle with grated cheese and serve.
