Southwestern Potato Salad Source: Woman's World - 7/17/01 Servings: 4
1 1/2 pounds small red potatoes -- halved 1/2 cup mayonnaise 2 tablespoons lime juice 1 1/2 teaspoons chili powder 1 teaspoon grated lime zest 1/4 teaspoon cayenne pepper 1/4 teaspoon garlic powder 1/4 teaspoon salt 1 cup grape tomatoes -- halved 2 ribs celery -- thinly sliced 3 scallions -- chopped 2 tablespoons chopped fresh cilantro
In pot over high heat combine potatoes with enough salted water to cover; bring to boil. Cook until tender, about 10-14 minutes. Drain; cool slightly, about 5 minutes.
Meanwhile, in serving bowl combine mayonnaise, juice, chili powder, zest, cayenne, garlic powder, and salt. Add potatoes, tomatoes, celery and scallions; toss until well coated with dressing. Sprinkle with cilantro. Serve immediately or cover and refrigerate until ready to serve.
