Grandma's Crumb Cake

4 cups flour, sifted
2 cups light brown sugar, firmly packed
1 cup margarine
16 oz. sour cream
2 eggs, slightly beaten
1 tsp. baking soda
1 tsp. vanilla extract
Pinch of salt

In large bowl, with electric mixer, combine flour, brown sugar, and margarine, to make fine crumbs. Reserve 1 cup of crumbs.

Add remaining ingredients, mixing at low speed until moist. Beat at medium speed 2 minutes, scraping bowl often. Pour batter into 2 greased and floured oblong pans (7 1/2 x 11 x 1 1/2 inches). Sprinkle tops with reserved crumbs.

Bake in 350 degree oven for 40 minutes. Cake tests done when toothpick inserted in center comes out clean.
