Beer Battered Mushrooms
2 cups all purpose flour 1 1/2 cup beer 1 Tbs. salt 1 1/2 tsp. garlic powder 1 tsp. baking powder 36 small button mushrooms, stems removed oil for deep frying
Combine the flour, salt, garlic powder and baking powder in a mixing bowl.
Add the beer and whisk until smooth. Cover and let stand for 30 minutes until the batter is frothy. Whisk again and refrigerate until ready to use. Batter can be prepared 1 day ahead if desired (store covered in the refrigerator).
Heat oil in a deep fryer to 375 F. Dip each mushroom into batter, covering cap completely. Fry in batches until golden brown. Drain on brown paper. Allow the oil to return to 375 F before adding next batch. - rec.food.cooking/Jill McQuown/2002
