This is very tasty! Good to have when we have hunger pangs but don't want calories.

Diet Soup
Source: Weight Watchers

1/4 cup onion chopped
2 cups chicken broth
2 cloves garlic minced
1 1/2 cups zucchini sliced
1/2 cup carrot sliced
1/2 cup tomatoes chopped
1 tsp. basil
1/8 tsp. pepper

Cook onion, broth and garlic on high heat until onion is transparent. Add the rest of the ingredients and boil 10 minutes. Reduce heat to medium. Add 2 cups water and cook 20 minutes. Take out 1 cup of the vegetables and puree in blender and then put back in soup. Heat again and serve.
