Chocolate Doughnuts

1 cup sour milk (1 cup milk plus 1 1/2 Tbsp lemon juice added)
2/3 cup sugar
2 tsp cream of tartar
2 tsp baking soda
1 1/2 tsp nutmeg
1/2 tsp salt
2 beaten eggs
1 cup cocoa
6 Tbsp margarine
2 tsp vanilla
flour

Mix all the above ingredients together (except flour) well. Begin adding flour slowly until you have a soft dough that has scarcely any stickiness if you press your finger in it. Do not overmix/overwork dough and it should be soft no stiff. Refrigerate for a few hours. Roll out on floured board and cut.

When putting into hot oil (perhaps 340 degrees) the dough is almost limp and of need of support so avoid adding too much flour in the rolling/ cutting process. When fried let cool a few minutes and then roll in powdered sugar if desired. These freeze well.
