Busybee's Mom's Peanut Brittle

Here is my mom's recipe for Peanut Brittle:

4 cups sugar
2 cups white Karo syrup
1 cup water
1 qt. of unsalted raw peanuts
1/2 stick butter
4 tsp. baking soda
2 tsp. salt

Cook sugar, Karo and water. Boil to 240 degrees (using a candy thermometer). Add 1 quart of peanuts, then cook to 320 degrees and remove from heat. Add butter, baking soda and salt. Stir vigorously and pour in a buttered pan, spreading mixture to a thin layer. Allow to cool, then break into small pieces.
