Whole Wheat Health Bread
Source: University of Kentucky Cooperative Extension Service

1 cup whole wheat flour
1 cup sifted self-rising flour
1/4 cup sugar
1/4 teaspoon soda
1/2 teaspoon salt
1 egg, beaten
1 1/2 cups buttermilk
1/4 cup honey
1/4 cup melted butter or margarine
1/2 cup chopped walnuts
1/2 cup raisins

Heat oven to 375 degrees F. Use a 9x5x3-inch loaf pan. In mixing bowl, stir together flours, sugar, soda and salt. Combine egg, buttermilk, honey and butter and add to dry ingredients, stirring just until moistened. Fold in nuts and raisins. Turn into greased pan and bake 45 to 50 minutes. Let cool in pan 10 minutes. Remove from pan and cool thoroughly.

Notes: This whole wheat loaf will be more compact and will not rise as high as many quick loaf breads. If using plain flour, stir in 1 teaspoon soda, 1 teaspoon baking powder, and 1 teaspoon salt with flours.
