Mile-Hi Sugar Cookies (WW points=2)

This sugar cookie recipe is from the Colorado Heart Association and has only one gram of fat per cookie and 80 calories. This is achieved by using a small amount of reduced fat stick margarine and using egg whites instead of whole eggs. The dough will be very soft but can be refrigerated and then later rolled into balls in well floured hands. These round cookies will look seasonal if you use red sugar sprinkles.

4 tablespoons reduced fat stick margarine
2/3 cup sugar
2 egg whites
1 tablespoon lemon juice
1 1/2 cups flour
1/2 teaspoon baking soda
1 tablespoon sugar

Preheat oven to 375 F. Cream softened margarine by gradually adding 2/3 cup sugar and mix until well blended. Add egg whites and lemon juice; beat until blended. Combine flour and baking soda; gradually add to creamed mixture, mixing well. Shape dough into 18 balls with floured hands; roll in 1 tablespoon sugar. Place 2 inches apart on ungreased cookie sheet. Flatten with bottom of glass. Bake for 9 minutes. Do not overbake. Cool on wire racks.
