Fruit Pizza

Sugar Cookie Crust:
1 cup butter -- softened
1 cup sifted powdered sugar
1/3 cup granulated sugar
1 large egg
3/4 tsp. vanilla
2 1/2 cups all-purpose flour
2 teaspoon baking soda
2 teaspoon cream of tartar
Orange Sauce:
1/2 cup granulated sugar
1/4 tsp. orange zest
1/4 tsp. lemon zest
1 cup fresh orange juice
2 Tbsp. fresh lemon juice
4 tsp. cornstarch
Filling:
2 packages softened cream cheese -- (8 ounces each)
1 cup sifted powdered sugar
1 teaspoon vanilla extract
Fruit of choice: (about 7 cups total)
strawberries, kiwi, pineapple, mandarin oranges, peaches, bananas, grapes, raspberries, blueberries, etc.

Preheat oven to 325 degrees.

In a large bowl, cream together the butter and sugars until light. Mix in egg and vanilla beating well.

Combine the dry ingredients, add to the creamed mixture, and mix until combined.

Divide the dough in half and press into two 12 inch pizza pans that have been lightly greased (I used parchment paper). Lightly flour your fingertips if necessary. Bake for 12-15 minutes or until golden; cool. (Mine took a little longer)

To prepare the orange sauce, combine all ingredients in a small saucepan. Cook and stir over medium heat until the mixture is thick. Cook and stir for 2 minutes more. Cover and cool sauce without stirring.

For the filling, beat cream cheese with powdered sugar and vanilla until light. Spread on cooled crust.

Prepare desired fruit and dry on paper towels. Arrange fruit on top of filling in a decorative pattern. Glaze fruit with orange sauce and chill. Best served the same day you assemble it but leftovers are still good providing you dried your fruit off.

NOTES : I used unsalted butter, so I added a scant 1/4 t. salt to the dry ingredients for the crust. I used 3/4 t. vanilla and about 1/8 t. almond extract in the crust. And I used a little more zest in the orange sauce. For the fruit I used sliced strawberries, pineapple chunks, sliced kiwi that had been cut in half, and mandarin oranges in the middle. I used 2 or 3 pints of strawberries, 2 large cans of pineapple chunks, 2 cans mandarin oranges, and 6 kiwi.
