Garbanzo Bean Salad
5 tomatoes cut into medium size wedges 1 medium green pepper cut into chunks 1 small onion cut julienne style 3 cucumbers, forked, then quartered and sliced 1 19-oz. can of garbanzo beans salt and pepper to taste 1 cup of olive oil 1/2 cup of red wine vinegar 4 anchovies, chopped (optional) 1/2 bunch fresh dill (dried dill may be used in its place)
Mix all ingredients in a large serving bowl and toss. In a separate bowl, prepare the dressing. Pour in desired amount of dressing and then toss. |
