SUBSTANTIAL RICE SALAD Based on a newspaper clippings recipe. One of my favorite salads for picnics & outdoor activities. Serves 12
LEMON HERB DRESSING: 1 8oz can plain low fat yogurt 1/4 cup lime juice 4 tb good extra virgin olive oil 1/4 tsp dried marjoram, crumbled 1/4 tsp dried thyme, crumbled 1/4 tsp garlic powder 1/4 tsp ground pepper
Other ingredients: 4 cups cooked white rice 2 medium tomatoes chopped 2 small zucchini, diced 1 green pepper, diced 2 celery stalks, diced 2 carrots, diced 1 pkg frozen peas, thawed 1 can corn kernels, drained 3/4 cup thinly sliced green onions 1 cup sliced pepperoni sausage, sliced and chopped
For the dressing, combine all ingredients in a bowl. Chill until ready to use. Mix the remainder ingredients in a big plastic bowl with cover. Pour dressing over. Toss lightly and cover. Refrigerate until serving time.
