Ritz Apple Pie

2 cups boiling water
1 1/2 cups white sugar
2 tsp cream of tartar
22 whole Ritz Crackers
one 9 inch unbaked pie shell
1/2 tsp cinnamon
1/2 tsp nutmeg
lemon juice
butter
pastry for the topping

Bring water, sugar, and cream of tartar to a boil. Add ritz crackers, do not stir...just drop them in. Cook on medium heat for 2 minutes. Pour into unbaked pie shell and sprinkle with cinnamon, nutmeg, and lemon juice. Dot with butter. Cover with pastry and bake at 450*F for 10 minutes. Reduce heat to 350*F and continue baking for 30 minutes. This pie is really amazing!! I have fooled people who thought it was apple pie made with apples. Try it...you will be surprised!!
