PUMPKIN PECAN BARS USING CAKE MIX
4 eggs, well beaten 1 pound canned pumpkin (not pie filling) 1 1/2 cups sugar 1/4 teaspoon salt 1 teaspoon ground ginger 1 teaspoon ground cinnamon 1/2 teaspoon ground cloves 1 box (2 layer size) yellow cake mix 1/2 cup butter, melted 1 cup chopped pecans whippted cream (optional, for serving)
Mix eggs, pumpkin, sugar, salt, ginger, cinnamon, and cloves together; pour into a 13x9-inch pan. Sprinkle dry cake mix on top; drizzle melted butter over top and spread chopped nuts over all.
Bake at 325F for 1 hour and 20 minutes. Cover with foil if top begins to brown too much.
Cut into squares; serve topped with whipped cream if desired.
