Cinnamon Nut Brunch Loaf rec.food.cooking/Susan Cassidy/1994
A pound cake-like loaf with a streusel layer marbled in the middle - great for brunch, etc.
1/4 cup brown sugar 2 cups flour 2 Tbsp. softened butter or margarine 1 tsp. baking soda 1/4 cup chopped nuts 1 tsp. baking powder 1 tsp. cinnamon 1/2 tsp.salt 1/2 cup shortening 2/3 cup undiluted evaporated milk 1 tsp. vanilla 1/3 cup water 3/4 cup sugar 1 Tbsp. vinegar 2 eggs
Combine brown sugar, nuts, butter and cinnamon; set aside. Spray 9 x 5 x 3 inch loaf pan w/non-stick cooking spray.
Cream shortening, sugar, and vanilla thoroughly. Add eggs one at a time, beating thoroughly after each one. Sift together flour, baking powder, baking soda, and salt.
Combine evaporated milk and water, stir in vinegar. Add flour mixture alternately with milk mixture. Blend well after each addition. Pour half the batter into prepared loaf pan.
Sprinkle on streusel (brown sugar and nut) mixture, trying not to get it all the way out to the edge (will make a hole in the side of the loaf).
Top with remaining batter. Bake in 325 degree oven 45 to 50 minutes or until inserted toothpick comes out clean.
