Layered Mediterranean Dip Yield: 10 Servings Source: Southern Living
2 15.5 oz cans black beans -(rinsed & drained); mashed 1/2 c chopped tomato 1/2 c chopped cucumber 1/3 c sliced ripe olives 1/4 c chopped green onions 1 tb olive oil 1 ts Greek seasoning 1 4 oz pkg tomato-basil feta -cheese; crumbled
Spread beans in a shallow 9-inch dish. Combine tomato and next five ingredients and toss gently. Sprinkle tomato mixture over beans. Top with crumbled feta cheese. Cover and chill thoroughly.
