Cherry Cranberry Salad
20 ounces pitted tart red cherries, drained -- syrup reserved 3 ounces cherry gelatin powder 8 ounces jellied cranberries 3 ounces lemon gelatin powder 3 ounces cream cheese or low cal cream cheese -- softened 1/3 cup mayonnaise or Light mayonnaise 8 3/4 ounces crushed pineapple -- undrained 1/2 cup whipping cream 1 cup tiny marshmallows 2 tablespoons chopped nuts Drain cherries. Reserve syrup and add water to make 1 cup liquid. Bring to boil. Remove from heat. Add cherry gelatin. Stir well.
With fork break up jellied cranberry sauce. Stir into cherry gelatin until smooth. Stir in drained cherries. Turn into a 9x9x2 or 11x7-inch glass dish. Chill.
Meanwhile, dissolve lemon gelatin in 1 cup boiling water. Beat cream cheese and mayonnaise. Gradually add lemon gelatin. Stir in crushed pineapple. Chill until partially set.
Whip cream. Fold into lemon mixture with marshmallows. Spread on top of cherry gelatin. Sprinkle with chopped nuts. Cover and chill until firm. Source: unknown
