Bean & Salsa Stew This stew will warm you up when it is cold outside! 2 (15 to 16-ounce) cans red or pinto beans, drained 1 (28-ounce) can Italian-style plum tomatoes, coarsely chopped 1 (12-ounce) jar (1 1/2 cups) green salsa 2 bay leaves 1 medium (1/2 cup) red onion, thinly sliced 2 teaspoons finely chopped fresh garlic 1 to 2 teaspoons finely chopped seeded jalapeño pepper 1/2 teaspoon coarsely ground pepper
Stir together all ingredients in 3-quart saucepan. Cook over medium-high heat, stirring occasionally, until heated through (20 to 25 minutes). Makes 6 (1 1/4-cup) servings.
