I have made this before, and will be making it again tomorrow. It is from "The slow cooker cookbook", by Gina Steer.
Florida Chicken:
4 chicken quarters 1 tbs oil 1 tbs unsalted butter 1 1/4 pint orange juice (300 ml) 1 tbs grated orange and lemon rind 2 tbs light soy sauce 1 tbs orange blossom honey 1/2 to 1 tsp dried minced chiles 2 tsp cornstarch fresh herbs, to garnish warm crusty bread, or fresh cooked new potatoes and roasted egetables, to serve
Preheat the slow cooker on high. Wipe the chicken quarters, heat the oil and butter in a large skillet, and brown the chicken all over. Remove and drain well on paper towels, then arrange in the slow cooker cooking pot.
Blend the orange juice with the orange and lemon rind, soy sauce, honey, and minced chiles, then pour over the chicken. Cover with the lid and cook on high for 3 to 5 hours. Drain off the cooking liquor into a small pan and bring to a boil. Blend the cornstarch with 1 tablespoon of water, stir into the boiling sauce, and cook until thickened. Garnish the chicken with the herbs, and serve with the sauce, bread or new potatoes, and roasted vegetables.
