Chicken Salad on Croissant

This recipe is from a restaurant I once worked at. The measurements on the left make about 1 quart, if I remember correctly. Measurements on the right are everything halved.

2/3 cup mayonnaise 1/3 cup
2 tbsp apple cider vinegar 1 tbsp
1/4 cup half-n-half 1/8 cup
1/4 cup sour cream.1/8 cup
1 tbsp chopped white onion.1/2 tbsp
1 cup thinly sliced celery.1/2 cup
1/2 cup chopped cashews.1/4 cup
3/4 tsp salt.1/2 tsp
1/2 tsp black pepper.1/4 tsp
1 1/2 lbs baked chicken breast cut into 1/4-inch pieces.3/4 lb (12 oz)

Mix first four ingredients then mix and add the next five. Finally, mix in chicken.

Serve on croissant with lettuce and tomato.
