Microwave Strawberry or Peach Pie rec.food.recipes/Kirk & Karen Mathis/1996
Crust: 1 1/2 cups flour 1/2 tsp. salt 2 Tbsp. sugar 1/2 cup oil 2 Tbsp. milk
Mix with pastry blender and press into pie pan. Microwave on high 5-7 minutes - rotate dish 1/2 turn every minute. (Or bake 10 minutes in 400 degree oven.)
Filling: 1 cup water 1 cup sugar 2 Tbsp. corn syrup 3 Tbsp. cornstarch
Microwave filling 3-5 minutes or until thick and clear (do not overcook!!)
Add: 3 Tbsp Strawberry Jello
Cool slightly and add: 1 quart fresh sliced strawberries
Pour filling into crust. Chill several hours.
Variation: May use peaches and peach Jello.
