Scalloped Potatoes with Ham rec.food.cooking/Seesa 2/1997
My favorite thing to do with leftover ham is a scalloped potato and ham bake.. 4 medium potatoes, sliced thin (peeled or not, up to you) 1 cup grated cheese, optional (Cheddar is good)* 1 medium onion, sliced (I do rings, it doesn’t matter) 1 to 2 cups chopped ham (to taste or how much you have leftover) 4 tablespoons butter or margarine 4 to 5 tablespoons flour Milk enough to cover (see note) Salt, Pepper, Garlic powder is optional
In a baking dish make layers of sliced potatoes, cheese, and onions; dot with some of the butter and half of the flour. Season with salt, pepper and garlic powder. Place a layer of ham, then the rest of the potatoes and onions season then dot with the rest of the butter and flour. More ham and cheese on top if you wish. Pour enough milk to be even with the top layer. Note: This measurement isn’t exact because pan and potato sizes vary.
Bake at 325F (for a glass dish), uncovered 45-60 minutes or until the potatoes are fork tender
*You can add grated cheese for an Au Gratin, but I like the plain scalloped potatoes.
To make this for a crowd, I just get a BIG casserole dish, start slicing the potatoes and add the ham and flour/butter each layer as I go. Baking time is a little longer for a bigger dish.
