Jicama Salad with Orange Vinaigrette alt.food.vegan/MrFalafel/2002
1 cup orange juice 1 1/2 tbsp orange marmalade 4 cups jicama, peeled and sliced into julienne strips 1 red bell pepper, diced 3 tbsp chopped fresh parsley salt to taste
Whisk together the orange juice and marmalade. Add remaining ingredients and mix well. Marinate in the refrigerator several hours or overnight.
